A great Gluten Free Vegan Pumpkin Muffin recipe!

Also have you guys seen the Gluten Free King Arthur's Flour? I love it! I love all King Arthur's Flours, but a gluten free one that works great? I am sold! So here is the recipe:

1.5 Cups GF Flour (I use King Arthur's)
1/2 tsp salt
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp ground ginger
dash of cloves
1 can pumpkin puree
1/4 Cup canola oil
3 TBSP flaxseed meal mixed with enough hot water to make 1/2 cup
1/4 Cup water
1/2 Cup sugar

Preheat oven to 350 degrees, use muffin liners. Mix the flour, salt, baking soda, and spices. Mix the wet ingredients and then fold in to dry until just combined. Spoon into muffin liners, bake for 20-25 minutes or until toothpick comes out clean. Makes 12 standard muffins.

These are great for Fall, my kiddos love them!

The beginning

My daughter was less than a year old when we discovered that she was severely allergic to cow's milk. (We later added, eggs, peanuts and walnuts to the list of foods that make my heart race.) I attempted to feed her a bottle of formula and ended up with a new set of rules for cooking. I have come a long way and would like to offer my hard won knowledge with others. I hope you will find the recipes and recommendations helpful in making food a joyful part of your family's life.

Plus gluten free, egg free, dairy free, tree nut free and peanut free! Lots of people are trying to raise a family of healthy earth conscious eaters. I just have a few extra hurdles to get around.
